Step:
Heat the groundnut oil in a pan, add the crayfish and cook until pink. Season with salt and freshly-ground black pepper. Add the curry powder and stir.
Add the tomatoes, grated coconut and coconut milk. Bring the mixture to a simmer and cook, covered, for 15 minutes, or until the tomatoes are soft.
Cover and simmer for 10 minutes. Serve with rice.

1 kg crayfish washed (wash with clean rubber gloves to avoid getting hurt)
25 g grated coconut
4 tomatoes, diced
3 tbsp groundnut oil
2 tbsp any hot curry powder
200 ml coconut milk
to taste salt and freshly-ground black pepper,
