Preheat oven to 450.
Mix cauliflower, olive oil, thyme, rosemary, red pepper flakes, salt & pepper.
Spread on baking sheet or dish.
Roast for 15 to 20 minutes until cauliflower starts to soften & begins to brown on the bottom.
Toss with the vinegar & sprinkle with the cheese.
Return to the oven and roast until the cheese is melted and any moisture has evaporated (5-10 min).
