Make lemonade concentrate
Put lemonade concentrate & lemon zest in a pan and boil rapidly for about 5 minutes until syrupy set aside to cool but don't let it set.
Whisk the egg whites for about 3+ minutes until frothy and thick like meringue
Put the colouring, liquid glucose and pina colada in the egg whites and stir to mix in
Pour the lemon syrup into the egg mix and stir, then cover and put into the fridge to cool. About 30 minutes
When chilled turn the ice cream maker on paddles turning pour the mixture in and leave to run for the 60 minutes. If it's right consistany serve or put into freezeable container & freeze. If not run again until you get the right consistany.
