Put flour, eggs and bread crumbs in separate shallow bowls. Dry meat on each side. Dip in flour, then shake off excess. Run through egg to coat lightly and hold meat over liquid to let excess fall back in bowl. Lay meat in breadcrumbs, turn over and press into breading to coat. Lay on piece of wax paper.
Heat large skillet over medium heat, then add oil. Cook meat in oil until brown, about 2 mins. Turn over and cook other side til brown, about 2 mins.
