Step:

  1. Preheat oven to 350F

  2. Beat eggs, sugar and pumpkin in a bowl.

  3. Add vanilla extract.

  4. In separate bowl combine almond and coconut flour, spice, salt and baking soda.

  5. Add dry ingredients into wet mixture

  6. Mix well.

  7. Dough should be stiff enough to roll into balls. Divide dough in half. Roll into 2 equal sized balls (tennis ball)

  8. On parchment paper press down balls and cut into 8 pieces.

  9. Separate triangles and place on greased baking sheet

  10. Bake for 20 min.

  11. Let cool.

  1. 1 1/2 cup almond flour
  2. 1/2 cup coconut flour
  3. 1/3 cup raw sugar or coconut palm sugar
  4. 2 eggs
  5. 1/2 cup canned pumpkin
  6. 1 tbsp pumpkin spice
  7. 1 tsp baking soda
  8. 1 tsp vanilla extract
  9. 1/4 tsp salt
