Step:

  1. In a medium saucepan, heat the oil and cook the onion and garlic until soft and translucent, about 5 minutes.

  2. Add the water and bring everything to a boil.

  3. Stir through the quinoa and cook, uncovered, for 20 minutes, until the water is absorbed.

  4. Remove from heat, fluff with a fork, and set aside.

  5. Stir through the fresh herbs and lemon juice.

  6. Season with salt and pepper and serve right away.


Ingredients

  1. 1 onion, finely chopped
  2. 1 tbsp olive oil
  3. 1 clove garlic, minced
  4. 2 cup water or chicken stock
  5. 1 cup quinoa, rinsed
  6. 1/2 cup chopped parsley
  7. 1/3 cup fresh mint
  8. 2 tbsp fresh oregano, chopped
  9. 1 zest of 1 lemon
  10. 4 tbsp lemon juice (2 lemons), or blood orange if in season
  11. 1 sea salt and black pepper
