Step:

  1. Heat oil in large pot over low heat. Cook onion for 1-2 minutes. Add spinach and cook for another 1-2 minutes. Remove from heat.

  2. In small bowl, beat eggs and season with salt and pepper. Stir in feta, green onion, oregano and nutmeg.

  3. Preheat oven to 350. Lay 1 sheet of pastry into dry pie dish and brush with melted butter. Repeat with another 3 sheets.

  4. Keep phyllo covered with a damp towel while working. Mix egg mixture into pot of spinach. Spoon into pie dish.

  5. Cover with 4 sheets of pastry, brushing with butter between each layer. Press edges together.

  6. Scrunch up last 2 sheets on top and brush with butter. Bake 35-40 minutes or until top is golden brown.

  7. Let cool 10 minutes before cutting.

  1. 9 oz fresh baby spinach
  2. 1 small onion, chopped fine
  3. 1 tbsp olive oil
  4. 2 eggs
  5. 7 oz feta cheese, crumbled
  6. 1 tsp dried oregano
  7. 2 green onions, sliced
  8. dash nutmeg
  9. 10 sheets phyllo pastry dough
  10. 4 tbsp butter, melted
  11. 1 salt and pepper, to taste
