Step:

  1. In a heavy bottomed pot add the milk, cream and 1 tsp of sugar gently bring to a simmer

  2. In a heat proof bowl put remaining sugar and egg yolks and whisk by hand whisk until creamy and lighter in color

  3. Add the warmed cream and milk mixture to the egg mixture and mix well

  4. Return mixture to pan add vanilla bean seeds and gently heat, stirring constantly to avoid lumps or burning until thicken and served hot or cold

  5. Save the empty vanilla bean, put it into sugar and then u get vanilla sugar (just a little tip)

  2. 250 ml heavy/double cream
  3. 50 grams caster sugar
  4. 6 large egg yolks
  5. 1 vanilla pod seeded
